These peanut butter oatmeal protein cookies strike the right balance between sweet and salty and pack the nutritional benefit of a post-workout snack
Here’s a spin on a classic we all know and love “peanut butter blossoms” without all the guilt. High in protein and low in fat – enjoy two of these decadent cookies for just under 300 calories. Want a lighter cookie – try replacing the whole eggs for egg whites. You can also opt to sweeten these up a bit more by adding your favorite sweetener.

- 1 cup peanut butter
- 1 scoop chocolate weigh protein powder 30 (g)
- 1/3 cup of plain rolled oats
- 2 eggs (substitute egg whites if preferred for a lighter cookie)
- 2 tsp vanilla extract
- Pinch of salt
- Hershey Kisses
Preheat oven to 350º
In a large bowl combine the following: peanut butter, protein powder, oats, eggs and vanilla
Mix all ingredients until combined and the texture becomes heavy and sticky (2-3 minutes)
Roll dough into 2 inch diameter balls and place on an un-greased cookie sheet
Using the backside of a fork press down on the cookie dough in a criss-cross pattern
Bake for 9 minutes then remove and push 1 Hershey Kiss into each cookie place back into the oven and bake for 2 additional minutes
Add your favorite sprinkles for a touch of holiday fun - Enjoy!
