Every morning I drop my son off to daycare and head to work passing by one of my favorite bagel cafe’s. Oh how I long for the days when I would stop in and grab an everything bagel with chive cream cheese. The first bite was loaded with all that topping goodness! It was a burst of flavor and chive cream cheese – I mean who doesn’t love a bagel?! Right! I couldn’t take it – the bagel craving was intense so it was time to find low carb everything bagel recipe and make it happen. Not to say I can’t have a good old-fashioned bagel but my “cheat day” wasn’t today and I couldn’t wait!
The buzz in the Keto community for a bread alternative is “fathead dough”.
This is a simple low-carb everything bagel recipe consisting of 4 main ingredients: almond flour, mozzarella cheese, cream cheese and eggs. You can also find this recipe using coconut flour, which has a slightly sweeter taste. I plan on trying that recipe next to see which flavor profile I prefer. Which flour do you prefer, drop a comment and let me know?
The recipe itself is pretty straight forward. Melt, mix, form bagel holes or use a silicone bagel pan and bake.
I don’t have a special bagel pan so I decided to do it freehand. I think the pictures say it all! These bagels baked up plump and perfect, so no need to go and buy any extra molds. Unnecessary if you ask me.
I’ve added a few notes to the recipe below so make sure and read each step. I hope your bagels bake up plump and fat like these beauties!
Low Carb Everything Bagels – Almond Flour
These delicious everything bagels are loaded with flavor – poppy seeds, sesame seeds, garlic flakes, onion flakes and pretzel salt. Spread a little cream cheese on top or stack your favorite deli sandwich or burger.
- 1 1/2 cups almond flour (Anthony's Almond Flour)
- 2 cups shredded low-moisture mozzarella cheese
- 2 ounces cream cheese
- 1 1/2 tbsp baking powder
- 2 eggs
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 4-5 tbsp Trader Joes – Everything But The Bagel Seasoning
-
Cube the cream cheese and add it to a microwave safe bowl along with the mozzarella cheese. Cook using 30 second durations until melted.
-
Add melted mixture to a food processor or bowl if mixing by hand – add 1 egg and pulse/mix until combined.
-
Add almond flour, baking powder, garlic powder and onion powder and pulse/mix until combined. Dough will be very sticky at this point.
-
Preset over to 400º – place dough in the freezer while the oven is warming up. This allows the dough to cool and set, will make for easier handling.
-
Line your cookie sheet with parchment paper or if using a mold – spray with non-stick cooking spray. Remove your dough from the freezer. Spray your hands with non-stick cooking spray for easier handling.
-
To make a good size bagel you’ll want to take a decent amount of dough – the size of a baseball or slightly a tad more. Portion your dough into equal amounts – this will yield roughly 6 bagels.
-
Place each dough ball onto the cookie sheet and gently press down in the center to make a ring. Stretch and shape the center and around the sides to form a bagel shape.
-
Take the remaining egg and beat – brush the top of each bagel with the egg wash and sprinkle a generous amount of Trader Joes – Everything But The Bagel Seasoning.
-
Bake in the center rack for roughly 15-16 minutes or until golden brown.
