Creamy, cheesy Broccoli Au Gratin makes a decadent low-carb side dish that everyone will love!
I’ve never been a fan of plain broccoli, I mean who really is?! Drizzle on a creamy garlic cheese sauce and smother it with more cheese, bake to a bubbly golden crust…Mmmmm yes please! This may surprise even the pickiest of eaters.
This simple cheese sauce though – rich and ooey-gooey goodness that seeps around each floret. You can use this base sauce for potato au gratin, cauliflower au gratin, alfredo sauce – so many dishes! It’s rich, decadent and absolutely delicious. It transforms plain old broccoli into this magical Broccoli Au Gratin and it’s low-carb, crazy!
Hearty enough to stand on its own, Broccoli Au Gratin pairs amazing with all proteins. Recently I made a butter & herb basted ribeye paired with this veggie casserole and it was heavenly. Low-Carb Broccoli Au Gratin
Creamy, cheesy Broccoli Au Gratin makes a decadent low-carb side dish that everyone will love!
- 1 lb broccoli, cut into florets (about 4 1/2 cups)
- 2 tbsp grass-fed butter
- 2 tbsp almond flour
- 1 1/2 cups heavy cream
- 2 cloves of garlic, minced
- 2 tbsp cream cheese
- 1/3 cup parmesan cheese
- 1 cup shredded mozzarella cheese

Preheat oven to 375º. Bring a large pot of water to a boil. Season with salt and add broccoli. Cook until it just begins to become tender (3-4 minutes), drain well. Pat with a paper towel and get as much moisture out of the broccoli as possible.

While the broccoli cooks – melt the butter in a sauce pan. Add the minced garlic and cook for 30 seconds until fragrant. Add the almond flour and whisk constantly, until it just begins to brown (1 minute or so).

Whisk in cream, cream cheese, salt and pepper and allow everything to incorporate. Once boiling reduce the heat to medium, stirring occasionally, until VERY thick, about 7-8 minutes.

Remove the sauce from the heat and add the parmesan cheese, whisk until incorporated.

Spread 1/3 of the sauce on the bottom of a casserole dish. Pack the broccoli into the pan and spread the rest of the sauce over top. Sprinkle with the shredded mozzarella cheese

Bake until golden brown and bubbly, about 25-30 minutes. OPTIONAL: broil for 2-3 minutes until golden

Let stand for 5 minutes and DEVOUR!
