I absolutely LOVE buffalo chicken! When I started a low-carb lifestyle I never imagined half of the delicious recipes I would be enjoying that are healthy and ditch the unnecessary carbs. Shocked to find I could enjoy my love for buffalo chicken anytime with this amazing buffalo chicken dip recipe!
Creamy buffalo-hot sauce, blue-cheese and/or ranch dressing and cheese all smothered and baked with shredded chicken, OMG Yummm! Cut up carrots, celery, zucchini and peppers – all are great for dipping.
For the chicken
I find the easiest option is to season and toss several breasts into a crock pot. Let that cook and do it’s thing. I season my chicken with salt, pepper, a little garlic powder, Italian seasoning and chicken stock. Cook on low for 3 hours and you’ll have tender chicken that easily pulls apart with a fork, perfect for this buffalo chicken recipe.
As far as the cheese topping
I’ve used cheddar, colby jack and mozzarella. They are all delicious and you can’t go wrong with either option. This particular time I had extra mozzarella that I had to use so that’s what I sprinkled on top. Feel free to pick your cheese and roll with it. I also love to chop some fresh scallions and sprinkle those on top, gives it an extra kick.

You can make buffalo chicken lettuce wraps out of the filling or add to salad to get a few meals out of the dish. Prep ahead of time and refrigerate until ready to bake, it’s the perfect plan ahead – no fuss recipe!
Quick and easy this low-carb Buffalo Chicken Dip has all the flavors we love. Buffalo sauce, blue cheese and/or ranch and loaded with cheese. This creamy appetizer is perfect for Super Bowl, sports games or any occasion. Enjoy with celery and carrots for low-carb dipping.
- 1 cup shredded cooked chicken or 1 (10-ounce) can chunk chicken
- 1 8-ounce package of cream cheese, softened
- 1/2 cup blue cheese or ranch dressing
- 3/4 cup buffalo sauce
- 1 cup shredded cheese (cheddar, colby jack, mozzarella) + 1/2 cup for topping
- blue cheese crumbles (optional)
- scallions for topping (optional)
Preheat oven to 350º.
Add softened cream cheese, buffalo sauce, dressing, 1 cup cheese and chicken to a bowl and mix until well combined.
Spray baking dish with non-stick cooking spray. Pour mixture into dish and top with remaining 1/2 cup of cheese.
Bake for 15-20 minutes or until hot and bubbly.
Remove from oven and add blue cheese crumbles and scallions. Serve with carrots, celery sticks and low-carb tortilla chips.
